Mole de Ajonjoli (Sesame Seed Mole)
On our last trip to Oaxaca while walking down the public market, 20 de Noviembre, we stopped and tried this mole in a store called Almita. It was so good that we decided to cook it for you! It's made with dried peppers, spices, and of course sesame seeds which are the star of the dish. We are serving it with sauteed pork tenderloin or chicken breast, rice, beans, and tortillas.
One of the most traditional soups of Mexico is called Pozole. This wonderful dinner soup is made with pork and hominy (large white corn) in a guajillo chile and tomato flavored broth. It is served as is done traditionally with a side of cabbage, radish, and onion for you to dress the soup as you wish and with tostadas. (gluten free)

Tacos de Saudero
Three tacos of slowly baked beef brisket on corn tortillas topped with cilantro and onion.
This is a large handmade tortilla that is topped with re-fried beans, salsa verde, your choice of beef, chicken, ground beef, pork, grilled steak, grilled chicken, or pork al pastor, chihuahua cheese, lettuce, pico de gallo, and Mexican cream.
