Chile Relleno Oaxaqueño
One of the most typical style of chile relleno in Oaxaca. It is a poblano pepper stuffed with a Oaxacan style shredded pork which is cooked with tomatoes, tomatillos, almonds, olives, capers, raisins, and spices to create a sweet and savory stuffing. It is served on a mirror of fresh tomato sauce with rice, lettuce, and tomatoes.
(the only ingredients with gluten are the olives and capers because of the vinegar).
Mole con Lomo de Puerco
This is another of the traditional and festive moles of Mexico cooked for special occasions. It is made with ancho chiles, guajillo chiles, nuts, sesame seeds, and more to create a complex delicious mole. Served with pork loin or chicken breast, rice, beans, and tortillas.
