This is one of the best known moles in Mexico that we tried in the town of San Pedro Atocpan which has the famous Mole Fair in October. This mole offers the depth of flavor that the combination of dried chiles, roasted vegetables, toasted almonds and spices bring. We serve it with chicken breast, rice, beans, and tortillas.
Pork Ribs in Red Sauce (little spicy)
This is a very well known dish all over Mexico which we tried again on our last trip to Mexico City. We felt that we had to cook it for you. It is very tender pork ribs in a red salsa that is a little bit spicy. (gluten free with white or green rice)
Baja Fish Tacos
Three tacos of battered cod with a chipotle aioli, topped with red and green cabbage and a sprinkling of queso fresco. Served with rice and beans.
